Nuggets of Gold: Salmon

Long before every other product on grocery shelves in the United States touted ‘NO Gluten, GMOs, high-fructose corn syrup, trans fat’ etc – we worked diligently to not feed our children most of these additives, food colorings, processed sugars, white flours – you get where I’m going.

At the same time, we hoped our children wouldn’t be ostracized as ‘weird’ or easily subjected to bullying.

When we learned our son was being picked on for bringing a peanut butter and jelly (spreadable fruit) sandwich for lunch each day – we knew it was basically a lost cause. Who makes fun of PB&J – a classic! But kids who want to be cruel will find something to be cruel about. 

One approach was to develop alternative recipes for foods their friends enjoyed. One of their favorites was Salmon Nuggets (to replace Chicken Nuggets – a US favorite fast food item).

I call them Nuggets of Gold because not only are they filled with Omega oils, calcium, protein, and fiber – they’re delicious – and were welcomed by kids and parents alike at gatherings.

And they are so simple to make! You  just need:

Salmon 4

1 can salmon
2 eggs
Mix together: 1 cup whole wheat flour, 1/4 cup flaxseed powder and/or wheat germ
Add any seasoning combo to taste: taco, salt/pepper, or tumeric/ginger/cinnamon
Oil for pan frying


Salmon 3Let the salmon fall apart into natural chunks and then cut into bite size pieces. Roll in beaten egg then in flour mixture.



Pan fry at medium heat until golden.

Salmon 2Dip in a mixture of pure maple syrup and spicy brown mustard.

Other canned salmon deliciousness includes:

Salmon spread sandwiches: salmon, mayonnaise, sweet relish. Mix gently, serve with sandwich accessories of choice. You can also serve inside a bell pepper or on a bed of lettuce.

Especially delicious Open Faced Melt: Place on rye bread, top with guacamole, sauerkraut (optional), cheese. Place on a rack over baking sheet. Broil until cheese is melted.

Salmon Dip: salmon, cream cheese, Worcestershire sauce (or another savory sauce – soy, oyster). Mix to whip consistency. Serve with crackers of choice.

    • Christine – I have some of those too. What do you use in place of meat? I used “Gimme Lean” for many years with LOADS of veggies. The syrup/mustard sauce is a great dip for bite-sized meatballs too. Thanks for joining the conversation.

  1. We do a salmon dip that’s similar. Salmon patties too are a favourite in our house – using either fresh roasted salmon or the tinned variety and some mashed potato and herbs. Yum.
